Creamy Cashew Butter

- 2 cups roasted unsalted cashews
- Optional add ins: honey, maple syrup, vanilla, cocoa powder, agave syrup, salt, cinnamon, oil of choice
Add the cashews to a high speed blender, or food processor, and blend on low until all the nuts are crushed. Gradually turn the speed higher and blend for at least five minutes until desired creamy consistency.
Transfer to a jar or airtight container and store in the refrigerator.
Per 1 Tablespoon serving:
98 Calories, 8 grams fat, 3 grams protein, 6 grams total carbohydrate, 1 gram fiber, 0.8 grams sugar, 2.5 mg sodium
Note: if you are using raw cashew nuts, roast them first in a single layer on a baking sheet at 350 degrees for 5-10 minutes until lightly toasted.
You may have to scrape down the sides of the blender as you go. Also, be sure not to burn out your motor. If you don’t have a high speed blender the time will take longer to get creamy and you may have to let your motor rest every five minutes.
Add a few teaspoons of oil if your blender is struggling but it is not always necessary. Be patient, it takes some time for the nuts to reach the creamy consistency.
