Prepare the zucchini: remove the ends and cut the zucchini into thirds. Cut each third, the long way into ½ inch thick slices. (depending upon the thickness of the zucchini , you should get 3-4 sliceThen slice those pieces into ½ inch thick matchsticks, trying to keep the size of them as even as possible.
Preheat oven to 425°Cover a baking sheet with aluminum foil and grease well.
Whisk the egg whites in a shallow bowl then add the milk and continue to whisk until well incorporated.
In a separate bowl, mix together parmesan cheese, breadcrumbs and panko breadcrumbs, garlic powder, parsley, and pepper.
Start your assembly line. First dip the zucchini sticks into the egg mixture, then roll in breadcrumb mixture until thoroughly coated. Place the coated zucchini on baking sheet while you get the remaining fries ready.
Bake for 25-30 minutes flipping half way through. Zucchini fries are done when they are crisped to your liking. Serve and enjoy with favorite sauce.
