Peach Caprese Salad
This peach caprese salad is a sweet twist on traditional caprese salad. It’s layered with sweet peaches, juicy tomatoes, creamy mozzarella, fresh basil, and topped with a drizzle of white balsamic glaze and honey. It’s all the best flavors of summer combined into one!

- 2 medium tomatoes cored and sliced into ¼ inch slices
- 2 ripe yellow peaches pitted & sliced into ¼ inch slices
- 1-8 oz ball fresh mozzarella cut into ¼ inch slices
- 12-15 fresh basil leaves sliced thin or kept whole
- 1-2 Tablespoons white balsamic glaze
- ½- 1 Tablespoon honey
- Ground black pepper to taste
- Salt to taste
On a large serving platter, stack or layer the slices of tomatoes, peaches, and mozzarella. Distribute the sliced or whole basil leaves on top, then drizzle with balsamic glaze and honey, to your liking (adding more as needed). Sprinkle with ground black pepper and salt to taste. Serve immediately and enjoy!

Notes
- Easily substitute white peaches or nectarines for the yellow peaches
- If you can’t find white balsamic glaze, you can substitute regular white balsamic and make your own glaze at home. Alternatively, you can use regular balsamic vinegar if you can’t find white balsamic in your stores.
- How to make a glaze at home: Bring the vinegar to a gentle boil and let it simmer, stirring occasionally, until thickened. It will probably take 15-20 minutes, and you want it to thicken like molasses or maple syrup.
- Sprinkle something crunchy like chopped pecans, pistachios, almonds, or sunflower seeds
- For a smoky flavor, bbq the peaches before assembling the salad
- You can slice the produce in rounds and layer or stack it on a plate or cut the tomatoes and peaches into wedges. Whatever your preference on presentation!
- If you want to prep it ahead of time, wait to put the honey and balsamic on it until ready to serve
