It’s labor day weekend, can’t believe September is already here! This weekend typically signifies the end of summer as kids go back to school. While fall season is my favorite, I am still trying to enjoy the remainder of the summer days. These peaches and cream popsicles are a great refreshing treat to cool off and to enjoy the last days of summer. Bring them to a BBQ this weekend, or serve it to your kids as a healthy after school treat.
As a kid, I remember enjoying Twin Pops (the popsicles with the double sticks.) They were a classic summer time staple. They were just frozen flavored sugar water, with no nutritional benefits, but they were so refreshing.
Store bought vs homemade popsicles
Store bought ice pops are often filled with added sugar, high-fructose corn syrup, artificial flavorings/colorings, and thickeners. These peaches and cream popsicles are made with real fruit and only five simple ingredients. Popsicles are really simple and easy to make at home. Be as creative as you want with the different flavor combinations.
These peaches and cream popsicles are as nutritious as they are delicious. They are a great way to increase your servings of fruit per day.
When you make ice pops made with real fruit you get all the vitamins, minerals and antioxidants found in those fruit. Using Greek yogurt not only adds a creamy consistency, but also adds protein. The added protein in these popsicles will make this snack more filling. If you can’t have dairy, feel free to swap the Greek yogurt for a coconut or soy based yogurt.
I added some honey to the recipe just to offset the Greek yogurt tanginess a bit. However, the peaches and vanilla flavored yogurt add enough sweetness that you can skip the honey if you don’t want to add any sugar.
How can I make homemade popsicles at home?
If you want to make your own ice pops at home, there are a lot of molds available at different places: Target, Walmart, Amazon. I used the Zoku ice pop maker for the first time and it was amazing.
You freeze the ice pop base for 24 hours, pour the liquid in, and in 10 minutes the ice pops are frozen. Other ice pop molds usually have you pour the liquid into the mold and freeze for 6-8 hours. The Zoku maker made the ice pops instantly. Of course, if you don’t have a mold, go the classic route and use a paper Dixie cup and wooden popsicle sticks.
Peaches and Cream Popsicles
Ingredients
- 1 ½ cups diced peaches fresh or frozen if using frozen, allow to thaw first; if using fresh, remove the peel
- 1 ¼ cups Vanilla Greek yogurt or 2- 5.3 oz containers
- 1 Tbsp honey
- 1 tsp lemon juice
- ½ tsp vanilla extract
Instructions
- Using a blender or food processor, blend all the ingredients until pureed into a smoothie-like consistency.
- Pour into popsicle molds (or paper cups if you do not have a popsicle mold). Depending upon what popsicle mold you use, be sure to add the sticks before freezing for 4-6 hours. Or if you are using Dixie cups freeze for an hour before adding popsicle sticks. Be sure to follow the instructions that come with your popsicle mold.
- Once completely frozen, you may have to run your mold under warm water to easily remove.
- Enjoy!
