What You Need To Make This Peach Tomato Caprese
The simplicity of this dish is what really brings out the flavor of these seasonal favorites. There are only a handful of ingredients, so make sure to buy the freshest, best quality ones you can. I recommend visiting a local farmers market if there’s one by you. You never know what other great produce you’ll find!
For this recipe the only items you’ll need include:
- Peaches
- Tomatoes
- Mozarella
- Basil
- Honey
- White balsamic glaze
- black pepper/salt
White Balsamic Vinegar Vs Regular
Both vinegars are made from pressed Italian white grapes. Traditional balsamic vinegar simmers until it becomes concentrated, and is then aged in barrels for several years. It produces a rich caramelized flavor with a deep and dark color.
White balsamic, on the other hand, is pressure cooked at a lower temperature to prevent it from browning, then aged for a short time. The result is a golden-hued vinegar with a more mild, less sweet yet fruity taste. I used white balsamic vinegar because it pairs perfectly with the ripe peaches.
What Is Balsamic Glaze?
Balsamic glaze, also called a balsamic reduction, is essentially just that, a reduction of balsamic vinegar. The balsamic vinegar is simmered is a saucepan until it has reduced down and thickened to a syrup-like consistency. It has a much more concentrated flavor and color than regular vinegar and it’s great for drizzling on salads, vegetables, grilled chicken, and more.
I usually buy store-bought balsamic glaze but if you have trouble finding it you can easily make it at home using regular balsamic vinegar. Bring the vinegar to a gentle boil and let it simmer, stirring occasionally, until thickened. It will probably take 15-20 minutes, and you want it to thicken like molasses or maple syrup.

- Easily substitute white peaches or nectarines
- Add leafy greens like arugula or escarole to make it into a salad
- If you can’t find white balsamic glaze, you can substitute regular white balsamic and make your own glaze at home. Alternatively, you can use regular balsamic vinegar if you can’t find white balsamic in your stores.
- Sprinkle something crunchy like chopped pecans, pistachios, almonds, or sunflower seeds
- For a smoky flavor, bbq the peaches before assembling the salad
- If you want to prep it ahead of time, wait to put the honey and balsamic on it until ready to serve

Peach Caprese Salad
Ingredients
- 2 medium tomatoes cored and sliced into ¼ inch slices
- 2 ripe yellow peaches pitted & sliced into ¼ inch slices
- 1-8 oz ball fresh mozzarella cut into ¼ inch slices
- 12-15 fresh basil leaves sliced thin or kept whole
- 1-2 Tablespoons white balsamic glaze
- ½- 1 Tablespoon honey
- Ground black pepper to taste
- Salt to taste
Instructions
- On a large serving platter, stack or layer the slices of tomatoes, peaches, and mozzarella. Distribute the sliced or whole basil leaves on top, then drizzle with balsamic glaze and honey, to your liking (adding more as needed). Sprinkle with ground black pepper and salt to taste. Serve immediately and enjoy!
