I know the idea of a chocolate dessert made with tofu sounds bizarre. But trust me, you will be pleasantly surprised by how delicious this mousse is. I promise you can’t even tell it’s made with tofu. Silken tofu is flavorless and has a creamy texture that lends itself well to dairy-free desserts. It’s also ideal for pureeing and makes this healthy chocolate mousse smooth, thick, and decadent.

I’ve made this healthy chocolate mousse for family and friends, and everyone is shocked when I tell them what’s in it.  They’re surprised to learn that the main ingredient is tofu because it tastes like it was made with heavy cream and sugar. Even some of my toughest food critics who would never eat tofu kept asking for more!

What’s in classic chocolate mousse?

If you have ever had traditional chocolate mousse, you already know it gets its rich and creamy texture from eggs, heavy cream, and sugar (sometimes butter too). The classic chocolate mousse uses raw eggs, which for most people isn’t an issue, but for people with compromised immune systems, pregnant women, the very young or old people, raw eggs should be avoided due to the risk of salmonella. This alternative egg-less chocolate mousse is a dish everyone can enjoy!

Plus, it’s so easy to make!

Traditional chocolate mousse involves beating the egg yolk and egg white separately, melting chocolate, whipping the heavy cream and then carefully folding it all together. For my chocolate mousse recipe all you need is a food processor or blender, and it comes together in just ten minutes (plus the chilling time!).

What ingredients do you need?

  • Milk of choice
  • Vanilla extract
  • Maple syrup or honey

Chocolate Selection

 Since the star of this recipe is chocolate, the better the chocolate, the better your dessert will be. You can use dark chocolate with 70% or more cocoa for more antioxidants, but be aware it will taste more bitter. I like a combination of dark and milk chocolate to get a rich, mild chocolatey flavor. You can also use semi-sweet, dark, milk or any combination of them, the choice is yours!

Can you use regular tofu instead of silken tofu?

Regular tofu and silken tofu have very different textures. Regular tofu has a spongy texture and won’t be as smooth when blended. Silken tofu has a higher water content which lends itself to a more custardy texture. When blended, it provides a smooth luscious consistency perfect for using in desserts.

Toppings 

While this chocolate mousse is delicious on its own it’s always fun to add some garnishes. Some suggestions include whipped cream, shaved chocolate, berries, sliced bananas, cherries, pomegranates, chopped nuts, coconut flakes, and more!

You can also serve this chocolate mousse as a parfait with fruit or crumbled cookies in between. Or, try spooning the chocolate mousse into a pre-made graham cracker or Oreo pie crust for a no-bake pie!

Ingredients

  • 1 ½ cups chocolate chips or bar chopped into small pieces
  • 1-12.3 oz package silken tofu drain off excess liquid *See notes
  • 2 teaspoons unsweetened cocoa powder
  • 1 ¼ teaspoon pure vanilla extract
  • 1 Tablespoon Milk of choice
  • Pinch of salt
  • ½ teaspoon pure maple syrup or honey more as needed

Optional toppings

  • Whipped cream or whipped coconut cream
  • Fruit
  • Chopped nuts
  • Coconut flakes
  • Shaved chocolate

Instructions

  • Melt the chocolate. I suggest using the double boiler method as it prevents the chocolate from burning. If you don’t own a double boiler you can do a make-shift one by placing a medium saucepan on the stove and add 1-2 inches of water to the pan. Place a heat-safe mixing bowl or a smaller saucepan on top. The water in the saucepan should not touch the bottom of the bowl. If you lift it up and the bottom is wet find a different bowl or saucepan to use.
  • Once you find a mixing bowl or saucepan, add the chocolate and place over simmering saucepan. As the chocolate begins to melt, stir the chocolate with a rubber spatula or spoon, until all the chocolate is fully melted. Once done, take off the heat and set aside.
  • Add the silken tofu to a food processor or high-speed blender and blend until smooth. Add the melted chocolate, cocoa powder, vanilla extract, milk, and salt. Blend until smooth, stopping to scrape down the sides.
  • Once ingredients are well blended, taste and then add maple syrup or honey to sweeten to your liking. Blend until smooth. Once the taste is to your liking, place in individual serving dishes and cover with seran wrap, or in a tight sealed container.
  • Chill in the refrigerator for at least 30 minutes before serving. Add your favorite toppings and enjoy!

Notes
You can use chocolate chips or a chocolate bar. If you use a chocolate bar, be sure to break it up into smaller pieces and use a dry measuring cup to measure. You can use semi-sweet, dark, milk or any combination of them, the choice is yours! I like a combination of milk and dark for a milder chocolate flavor.
Buy *Silken Tofu* not regular tofu!
*If you can only find a 16 oz silken tofu just increase the other ingredients slightly. For 16 oz silken tofu I would suggest these measurements: 2 cups of chocolate, 2 tsp cocoa powder, 1 ½ -1 ¾ tsp vanilla extract, 1 Tablespoon + 1 tsp milk, pinch of salt and then sweetener to your liking. You can always adjust/add more of any ingredient.
If you use dark chocolate, which is more bitter, you may have to taste and add additional sweetener to balance the bitterness. Taste and sweeten to your liking.
You can eat it right away but it’s more like a chocolate pudding. I suggest refrigerating it for at least 30 minutes for an even thicker consistency.
To make this vegan: use dairy-free chocolate, dairy-free milk, and maple syrup
