Cherry Yogurt Popsicles

My favorite way to use seasonal fruit is to make popsicles. They are a refreshing, nutritious treat, and a great way to get your fruit serving in. If you love cherries you’re going to love these cherry yogurt popsicles! Also check out my Peaches and Cream Popsicles to use up the last of summer peaches!

Homemade fruit popsicles

Ingredients  

These cherry and Greek yogurt popsicles are a little sweet, a little tart, creamy and absolutely delicious! They’re simple to make and only require four ingredients:

  • Cherries- fresh or frozen! If you use fresh be sure to pit the cherries before using them.
  • Vanilla Greek Yogurt- I chose vanilla Greek yogurt which is already sweetened so no need for additional sweetener. If you use plain yogurt you may want to add some honey to counterbalance the tang. Also full-fat or 2% yogurt will make the popsicles creamier and less icy.
  • Vanilla or almond extract- for extra flavor
  • Milk- any dairy or non-dairy milk.

These small, low calorie fruits pack a delicious flavor punch guaranteed to satisfy any sweet tooth. On top of that, they’re rich in vitamin C, potassium, calcium, iron, fiber, and many antioxidants, including anthocyanins, which give cherries their rich red color.

Health Benefits

Cherries’ high antioxidant content helps them fight off free radicals that damage our cells, while simultaneously decreasing inflammation in the body. Vitamin C helps boost the immune system to fight off infection and disease. The high potassium content decreases muscle soreness and lowers blood pressure. They’re also a good source of fiber. One cup of cherries has about three grams of fiber, which can help you feel full and help lower cholesterol.

Popsicle Mold  

If you want to make your own ice pops at home, there are a lot of molds available at different places: Target, Walmart, Amazon. I own the Zoku ice pop maker and it’s amazing. What I love about this ice pop maker is you can have your ice pops frozen in only ten minutes (after you freeze the base for 24 hours). Other ice pop molds have to freeze for 6-8 hours.

Without A Popsicle Mold  

Don’t own a popsicle mold? Don’t worry, you can still make these Greek yogurt popsicles. Just pour the mixture into Dixie cups, cover with aluminum foil, and place a wooden popsicle in.

Ingredients

  • 1 ½ cups frozen cherries
  • 1 Tablespoon water
  • 2 cups vanilla Greek yogurt
  • 3 Tablespoons milk of choice
  • ½ teaspoon vanilla extract

Instructions

  • Place frozen cherries and tablespoon of water in a small pot. Heat over medium heat and bring the cherries to a simmer, lightly smashing the cherries as they thaw to release the juices. Simmer for 10 minutes (it should slightly thicken almost like making a jam) then remove from the heat and let cool.
  • Once cooled to room temperature, add the cherries to a blender or food processor and blend until smooth. Place in a small bowl and chill in the refrigerator.
  • While the fruit is chilling, prepare the yogurt. To a medium mixing bowl add the yogurt, milk and vanilla extract and stir well to combine. Taste the mixture and adjust flavor. You can add sweetener like honey if you want it sweeter, but it’s not needed with vanilla yogurt.
  • Add the cherry puree to the yogurt mixture. Swirl the cherry mixture into the yogurt mixture, creating a marble effect. Pour the mixture into a liquid measuring cup so it’s easier to pour into molds.
  • Pour into popsicle molds (or paper cups if you do not have a popsicle mold). Depending upon what popsicle mold you use, be sure to add the sticks before freezing. Follow the instructions that come with your popsicle mold. Some freeze in 10 minutes others take 4-8 hours depending on the model.
  • Once completely frozen, enjoy your sweet frozen treat!

Notes:
If using fresh cherries be sure to de-stem and remove the pit
I chose to use vanilla Greek yogurt for the added flavor. If you want less sugar you can use plain Greek yogurt. You may want to add honey though to plain to balance the tang. Adjust the taste/sweetness to your liking before you put in the molds.
Also, I used 0% vanilla Greek yogurt because I couldn’t find 2% fat in my store. If you want a creamier popsicle get the yogurt with more fat. More fat will also decrease how ‘icy’ they get.
If you’re using dixie cups, pour the mixture in then cover with aluminum foil. Then poke the sticks through the aluminum so they stay in place. Freeze for 4-6 hours until hardened.
