Hi everyone, and welcome to my blog! I’m Rachel, a Registered Dietitian who loves to cook and believes that food can be both delicious and nourishing. The goal of this blog is to promote a balanced lifestyle by providing healthy eating tips and tricks, sharing easy-to-make nutritious recipes, and discussing new trends and research in the world of dietetics.
Growing up, one of my favorite memories is being in the kitchen with my mother, playing with different recipes and making delicious meals for my family to enjoy. As I went off to college, my interest in cooking grew and I explored using new ingredients and cooking techniques that incorporated healthy modifications of my mother’s recipes without sacrificing taste.
I completed my first bachelor’s degree from the University of Connecticut with a major in Human Development and Family Studies (HDFS) and a minor in Mathematics. While exploring job opportunities in the HDFS field, I realized I wanted to focus on a profession that was both personally fulfilling, and could be integrated with my love of nutrition, cooking, and health. After reading countless food and nutrition related blogs by people with similar interests to my own, I discovered that many had gone back to school to become Registered Dietitians. I had the mentality ‘if they can do it, so can I’. So I began my journey to become a Registered Dietitian, enrolling in all the science prerequisites (biology, microbiology, chemistry, organic chemistry, all the classes I avoided the first time around…somehow I survived those years) and then completed my second bachelor’s degree in Nutrition at the Long Island University.
I went on to do a full year of clinical training at New York Presbyterian Hospital Dietetic Internship program. I was exposed to a wide spectrum of medical cases and gained invaluable experience in both community and academic hospital settings. I also trained in a behavioral health facility and children’s hospital. I passed the board exam, and after a long journey, was excited to start my career as a Registered Dietitian.
Good health isn’t achieved overnight and there is no magic pill to success. I don’t believe in diets that cut out entire food groups, they are not sustainable long term and deprive the body of important nutrients necessary to sustain a balanced diet. It is important to learn the basics of healthy eating so they become a routine and integral part of your lifestyle. No food should be labeled as ‘good’ or ‘bad’. Some options are more nutritious than others, but I believe all foods can fit in moderation.
The same lifestyle and diet that works for my body is not necessarily what is optimal for someone else. Each person is unique and requires their own plan. I am not here to tell you what to eat or what not to eat. Rather, I offer guidance and inspiration in your journey to become the healthiest version of you.
